Cooking isn't one of my current favorite things to do. I've been in a rut with it for a while now. I often find recipes online and give them a try...hoping for a winner. It's time I gave back...so here is a yummy recipe to share. I think I've featured it a long time ago, and it's worth repeating.
Joan's Chicken Tortellini
4 chicken breasts, cooked, spiced to your liking and cubed
1 bunch broccoli
1 can artichoke hearts, quartered
2-3 carrots, sliced
1 can black olives
6-7 oz. tri-colored tortellini, cooked and cooled
Toss above ingredients together and mix with:
1 C. mayonnaise
1/4 C chili sauce
2 tsp. fresh lemon juice
2 tsp. dill
Refrigerate a couple hours before serving. Add a loaf of french bread. Fun to mix in if you like: sunflower seeds, walnuts or sliced almonds.
This is a recipe my Mother in Law served at a family dinner she had before we were even married. I still love it today. So does my family. This colorful dish is so great for Spring and Summer!

Yummmm...Could you make a big bowl of it and deliver toward Sioux City? I am in a rut too...but not wanting to cook whatsoever!
